Layered Chicken Biryani: Remade with new pictures!!


Chicken cooked in a spicy coconut-onion gravy, layered alternately with saffron flavored rice, garnished with fried onions, potatoes and nuts...a combination sure to fall in love with!!

Not a new recipe....but an old favorite which I remake and remake and keeping making again and again!

'M' was going be be back from a 2 week long business trip....and wanted to make something special for him. This 'Layered Chicken Biryani' is his favorite and so is my moms (who is visiting). So it was going to be a treat for them both:))

Vegetable Biryani

I know..I know..what you are thinking...I haven't been blogging actively lately....but a lot is happening this month and it's hard to catch up with everything!! Both kiddos birthdays in June, then the Puerto Rico trip...'in-laws' will be here next week...M's work travel....
Anyways....here is my favorite "Vegetable Biryani' recipe that I made for lil 'A's birthday party. The theme was 'Soap bubbles' as she loveeess popping bubbles and I made snack foods that were 'round' like bubbles!!

Round Melon balls in Melon shells-
Nutella sandwiches cut into circles-

Vegetable Biryani Recipe:

Ingredients:
Rice-
1 cup Basmati rice
1.5 cups Hot water plus a little more
4 of each cloves, black peppers,small cinnamon pieces
1/2tsp black jeera
salt
2tsp oil

Vegetable masala-
1/4 cup each of carrots,cauliflower,potatoes,green pepper,peas, corn kernels
1/2 cup dry/fresh grated coconut
2 medium onions sliced
2 medium tomatoes
1tbsp  chopped mint
1tsp sesame seeds
2tsp Biryani masala
2tsp red chili powder
2tsp ginger-garlic
4 of each cloves, black peppers,small cinnamon pieces
1tsp black jeera
salt
4tsp oil

Toppings and garnishing-
1 large onion sliced and fried till golden brown.
1 potato fried like french fries
1/4 tsp saffron in 2tsp warm milk
Chopped Cilantro
Chopped mint
Cashews
Almonds

Method:
1) Wash the rice and keep aside. Heat oil, add the cloves etc, ad the rice and saute for few seconds. Add the hot water,salt and let the rice cook and absorb the water. Cover for 10 mins. Then spread the rice in large plates to cool and help the grains remain separated.
2) For the veg.masala- roast the coconut, onions,tomatoes till golden. Let them cool. Grind in the blender along with ginger-garlic, sesame seeds.
3) Heat 2tsp oil,add cloves,cumin etc and the vegetables. Saute the vegetables till golden.Add the above masala paste, chili powder, biryani masala, salt etc Add very little water and cook.Add the chopped mint and mix.
4) Layering-
Coat the pan with some oil Add some cooked rice in a layer. Top with some Vegetable masala, fried onions, potatoes , chopped mint and cilantro.
Layer with rice again, then masala, then rice again. Top and decorate with the garnishing.
Pour the saffron-milk mixture all over the rice.
Steam in the oven/ stove top on low flame till steaming hot!

Serve hot along with cool cucumber-onion-yogurt Raita!

"Aroma From a Guest Kitchen"- (Guest= Seema Bakre)-Shrimp Biryani

Dish: Shrimp Biryani
After moving to Columbus,IN....Seema's house is like my 'Maher' (sister-brother's house). I get to go there and taste all the delicious food that she makes.She is always so enthusiastic about having people over...and making really good food for them.She had promised me to make her special 'Paneer Laddos'(and I haven't forgotten that Seema ;) I am going to make her make those sometime:)) But today she shares with us,this spicy- mouthwatering Shrimp Biryani which she made on a special occasion...her husbands birthday!




Ingredients:
1 lb raw Shrimps washed and remove excess water.
2 big onion chopped vertically, fry till crisp on low heat and keep aside.
½ green bell paper chopped in 1” pieces
½ yellow bell paper chopped in 1” pieces
2 tbsp ginger garlic paste
½ tsp shahi jeera
3 large tomatoes, finely chopped
¼ tsp turmeric
1 tsp red chilli pwd
2 tsp coriander powder
1-2 bay leaves
3 tbsp oil
pinch of saffron soaked in 3 tbsps luke warm milk for 10 mts
roasted cashews and fresh coriander leaves for garnish
2 tbsp mint coriander chutney (optional)
salt to taste

Dry roast on low flame for 2 mts and grind to a fine powder:
6-7 pepper corns
1″ cinnamon
4 cloves
1 green cardamom
1 black cardamom
½ star anise

Marinade:
1 tsp ginger garlic paste
1/2 tsp red chili powder
1 tsp lemon juice
2 tbsp Tandoor Chicken masala
salt

Method :
1.    Marinate shrimps with the ingredients called ‘marinade’ for 1/2 hr.
2.    Heat 3 tbsp oil add shahi jira and bay leaves
3.    Add ginger garlic paste and saute for 1 minute.
4.    Add dry roast masala powder and saute for 1 minute.
5.    Add chopped tomatoes and saute till the tomatoes are cooked and turn like a thick gravy.
6.    Add shrimps, green and yellow bell paper and cook till the shrimps are cooked. around 3 minutes. Do not over cook shrimps!
7.    Now add ¾ of the fried onions to this gravy and mix well.
8.    Add coriander powder, turmeric, chili powder.
9.    Adjust salt as per taste.
10.  Mix well and keep aside.
 
Ingredients for rice:
1 ½ cup Basmati rice
2 cloves
1 cardamom
1/2″ cinnamon stick
1 bay leaf
1/2 tbsp oil
1 tbsp salt
water as required

Cook rice in lots of water along with bay leaves, cloves, cinnamon, cardamom, oil and salt till its 80% cooked. Strain the water and spread the rice on a large wide plate.

Take a wide deep vessel to prepare the biryani.
1) In a heavy bottom pan, add 1tsp oil. Add 1/2 of the cooked shrimps gravy.
2) Add about 1/2 of the cooked rice on the gravy.
3) Add 2 tsp mint coriander chutney (optional) but gives very nice aroma to the rice.
4) Add the remaining gravy, and chopped cilantro.
5) Layer with remaining rice, fried onions and cashews. Sprinkle with saffron sticks in milk.
6) Close the pan with a tight lid.
7) Place the pan on a tava and then on a stove (this way the biryani won't burn while steaming)
8) Steam the biryani for about 8-10 mins Without letting much steam escape.
9) Garnish with cashews, cilantro,tomatoes and Serve hot!

'Everyday Cooking'- Layered Chicken Biryani

Before starting to cook for lunch, asked 'M' whether he would like 'Chicken curry' or Chicken Biryani' for lunch? 'M' is not a big fan of rice.He says,when he was a graduate student in Chicago,all he and his roommates would cook was....rice. It was easiest thingto cook and so he has had so much rice during those years..that now..he tries to avoid it whenever possible!

But, I have seen him eat rice whole heartily in one dish....'Chicken Biryani'.


With his approval on hand,I set to cook Chicken Biryani with 'layers'. Many 'dum biryani' recipes layer the rice and chicken alternately..and that's how famous 'Trushna's Biryani house' in Pune used to make it ,that's how my mom used to make it..and that's how I like to cook it too!


Recipe for Chicken :



Ingredients:


1 lb boneless chicken( you can use with bones too) cut into cubes


2 medium onions chopped vertically


1/2 cup grated coconut(fresh or dry)


2 tbsp tomato puree


2 cloves garlic


1/2 tsp grated ginger


1/2tsp sesame seeds


2tsp cilantro leaves and stems


1/2tsp chicken curry masala


1/2 tsp garam masala


1/2 tsp chili powder


1/4tsp turmeric


1/4 tsp cumin-coriander powder


2tsp mint paste


1tsp cumin seeds


1-2 bay leaves


1tbsp oil


salt to taste


Method:
1) Heat 1tsp oil, add the chopped onions and fry till golden brown.Add coconut,roast till brownish colored.Blend into smooth paste along with cilantro,garlic,ginger,sesame seeds.Keep aside.


2) Heat 2tsp oil,add bay leaves, cumin,the above paste and fry for 5-6 mins.Add turmeric,garam masala,chicken curry masala, chili powder,cumin coriander powder,tomato paste,mint paste,salt and fry again for 2-3 mins.


3) Add the cubes chicken and let it cook till well done.Add little water as and when needed.But the gravy should be thick and not too runny.


4) Garnish with cilantro leaves.
Recipe for Rice Pulav:


Ingredients:


1 cup Basmati rice,washed and drain


2 cups hot boiling water


1/2 cup mixed vegetable cut into small pieces (carrots,green beans,peas,corn etc)


2tsp ghee/butter


1/2tsp cumin


5-6 cloves


1/4tsp cinnamon powder


1/8tsp black pepper


1/8tsp cardamom powder


5-6 saffron sticks


Salt to taste


Method:
1) Heat 2tsp ghee,add cumin,cloves,rice and fry for 3-4 mins.


2) Add boiling hot water,black pepper,cinnamon,cardamom,saffron ,salt,vegetables etc and let it cook till almost well done.


3) Rice should be cooked,but individual grains should be seen (rice shouldn't be sticky).


4) Remove onto a plate and let cool.


For garnishing:


1) Fry 1 potato into finger chips


2) Fry 1 small onion into vertical chips


3) Roasted cashews


4)Chopped cilantro


5) Saffron sticks mixed in 1tsp milk


Layering Chicken and Rice to make Biryani:


1) In a heavy bottom pan, add 1tsp oil.Add 1/2 of the cooked chicken with gravy,some fried onions.


2) Add about 1/2 of the cooked rice on the chicken.


3) Sprinkle few drops of saffron milk and sticks


4) Add the remaining chicken,onions, cashews etc


5) Layer with remaining rice ,fried onions,potatoes,cashews.Sprinkle with saffron sticks in milk.


6) Close the pan with a tight lid.


7) Place the pan on a tava and then on a stove (this way the biryani won't burn when steaming/dum)


8) Steam the biryani for about 8-10 mins Without letting much steam escape.


9) Garnish with cashews,cilantro and Serve hot.


10) Can be served with cucumber raita/tomato soup/papad etc
