"Sweet Treats"- White Chocolate Bark with Pistachios,Almonds and Cranberries


I had seen Ina Garten ( Food Network) make this a long time ago. It looked so pretty and yet so easy to make..I had decided to try it out! It was my friend 'A's b'day and I was looking for some 'sweets' to carry along with the gift. This was a perfect thing to carry along ...looked so pretty,tasted delicious with those nuts and cranberries and was 'homemade' after all!
Chocolate Bark--
 According to 'baking bites'  a chocolate bark is- Chocolate bark is actually a sheet of chocolate that is usually covered with nuts, dried fruits, candies or even additional pieces of chocolate. Its is rustic looking in the sense that it is just thrown together, not laid out with a specific pattern to how the ingredients are placed, and it is broken into shards of various sizes to serve. The name “bark” starts to seem much less unusual when you see a box full of chocolate shards that actually do bear a slight resemblance to rough pieces of tree bark – albeit tasty tree bark.

1) I followed Ina Garten's recipe but used toasted Pistachios and almonds and dried cranberries as the additions to the white chocolate.
2) I toasted the nuts in microwave safe plate in the microwave
3) I used vanilla flavored white chocolate waffers as my white chocolate.

Recipe Verdict:
Loved the crunchy toasted nuts with the luscious white chocolate
Pretty easy to make...looks good too!
Will I make it again: Yes for sure!

"Nutritious and Delicious"- Homemade Cereal Bars



 With these really 'nutritious' cereal bars....I start the new section in the blog "Nutritious and Delicious".
My friend 'G" is really into eating nutritious,organic and homemade foods. She is a big inspiration for me to get up and make my own whole grain cereal bars and  'Healthy' cookies ( recipe coming soon). All these years M has been taking a cereal bar for breakfast, but never did I think of making one at home!! It was a eye opener the other day....when I met G...who by the way is a 'superwoman'...with so much energy and enthusiasm..you can hardly hold her hand in what all she can accomplish in a day!! Hats off to her!!

Ingredients:
1 and 1/2 cup Whole grain Quick Oats
1 cup Rice Crispies
1/8 cup Flax Seed meal
1/4 cup each  Nuts -Pistachios,Almonds
1/4 cup Raisins
1/8 cup Dark chocolate chips
1/4 cup Light Brown sugar
1/4 cup White sugar- (you can use all brown sugar instead)
1 tbsp Honey
1 Egg
1tsp Vanilla
1/4tsp Cinnamon
1tbsp Canola Oil
1 tbsp All purpose flour
1/4tsp salt

 * You can add other nuts like walnuts/pecans or fruits like dried cranberries/cherries etc.

Method:
1) Preheat oven to 350F. spread the oats and nuts on a cookie sheet and warm in the oven for 8-10 mins...until slightly toasted. reduce temperature to 325F. Coat a 8*11 inch pan or 9* 9 inch pan with aluminum foil.Spray with nonstick cooking spray.
2) Beat the egg.Mix oil, sugar and all of the above ingredients, stir well.

3) Press the mixture in the coated pan.


4) Bake at 325F for 15- 20 mins ....till slightly golden brown.
5)Let them cool and then cut onto bars with a oiled sharp knife
6) Store in airtight container.Makes 12 bars.
Your own nutritious and delicious -chewy and nutty cereal bar is ready when you want to snack!!!

"Sweet Treats"- Shrikhand/ Fruit and Nut Shrikhand

HAPPY GUDHI PADWA 2011!!!

'Shrikhand' is one of the favorite sweets at home.Back home in India, it was surely on the menu for 'Padwa'. Last night I had all forgotten about 'Padwa' being today. This morning when I remembered,I checked the refrigerator and found 1 can of yogurt and some fruits. There I had the sweet for the occasion!
Earlier ...Shrikhand mostly came in 2 flavors- Elaichi and Mango (Amrakhand)...but now they make various different varieties...Fruit Shrikhand, Nuts Shrikhand, Dry Fruits Shrikhand etc etc...
I decided to sort of combine all of that and make my 'Fruit and Nut Shrikhand'

 Ingredients:
1- 32 Oz can of Plain yogurt(Will make about 1+ cup of Shrikhand)
1/4-1/3rd cup sugar (depends on how sweet you want it)
1/2 tsp Elaichi powder(Cardamon)
1/4tsp Nutmeg powder
1 pinch Saffron
1tsp warm milk

Fruits and Nuts cut up in small pieces:
Mango
Apples
Raisins
Almonds
Pistachios
Cashews

Method:
1) On a cheesecloth, drain the yogurt.Tie the cheesecloth and hang for atleast 4 hrs.


2) All the water in the yogurt should drip away to give thick 'Chakka'. You can do this overnight.But 4-5 hrs will yield sufficient thick chakka.
3) Squeeze the cheesecloth occasionally to help water drain.
4) To the Chakka, add  sugar, cardamon, saffron in warm milk,nutmeg and mix well.Garnish with saffron and nuts.

5) For' fruit and nut' Shrikhand add the fruits and nuts.

"Sweet Treats"- Biscotti with Oats and Nuts


I love baking goodies at home.Especially Biscottis, Scones etc which we can have with our afternoon tea. Baking at home gives me the satisfaction....that I know what's exactly going in there and how much of it...I can cater the recipe to myself..make it less sweet, use less butter, add ingredients that my family likes etc etc .....
Now, I made up this recipe of Biscotti with Oats...not because 'Oats' is my families favorite...but to make them eat some oats!!! I like oats and have it for breakfast daily...but 'M' and 'E' are not oat fans at all...
These Biscottis have 'oats' and 'nuts' and are (may be) a little better for you than the ones with only 'all purpose' flour. And they tasted soooo good....crunchy, nuttier with perfect sweetness.


Ingredients:
2 cups all purpose flour
1 cup oatmeal (quick cooking oats)
1 cup sugar (adjust to taste)
3 large eggs
½ cup chopped roasted walnuts and almonds
4tbsp butter+1 tsp butter
2tbsp Cool whip topping
2tsp baking powder
2 pinches salt

Method:
1) Coarsely grind the oatmeal. Add 1 tsp butter and roast in microwave for 2 – 3 mins.
2) Beat 3 large eggs. Add softened (room temperature) butter and cool whip topping. Whip all together.
3) Add the all purpose flour, oatmeal, sugar, baking powder, chopped nuts, salt etc and make into dough.
4) Pre heat oven to 350 F
5) Roll the dough into two ‘logs’ on a greased baking sheet.
6) Bake on greased baking sheet for 20-25 mins , until lightly brown.

7) Cool the logs for 15-20 mins.
8) Slice the logs horizontally, to make ‘Biscottis’.



9) Bake the Biscottis again at 350F for 15-20 mins until crisp.
Enjoy the crunchy, nutty Biscottis with your tea or coffee..

"Sweet Treats"- Eggless Scones with Dark Chocolate and Nuts

"Scones" are sort of a quick bread....with crumbly texture ....can be sweet /savory....and can be made with various flavors and additions like cranberries, chocolate chips, poppy seeds ,lemon, chives, cheese, rosemary etc. They are mostly a 'breakfast food' and had with Jam, jelly, fruits etc.But.....
 I like scones with my afternoon tea!!! I think they go very well with the 'Indian style tea'.
The other day, my friend 'A', who is vegetarian asked me about baking 'eggless cakes'. Now, I usually do not bake 'Eggless'....but last week I wanted to bake... and had no eggs.So, I thought of giving eggless scones a try.I read through number of recipes and came up with this one, with all the flavors I like and ingredients I had on hand. The scones came out really well and did not feel 'eggless' or 'compromised' in any way at all.

Ingredients
2 cups All purpose flour

3/4 to 1 cup sugar (use less for less sweet scones)
½ cup Roasted Almond+ Walnut (powdered coarse)
1/4 cup sliced almonds
1/3cup dark chocolate chips/ chopped dark chocolate
6 tbsp Cold unsalted butter
1 and ½ cup + 2 tsp whipped topping (Cool whip frozen whipped topping) or Use whipping cream
1/2tsp salt
1tsp baking powder
1tsp Vanilla extract

Method:
1) Pre heat the oven to 325F


2) Grind together roasted almonds and walnuts to make coarse powder

3) Mix together flour, salt, baking powder, sugar, powdered nuts, sliced almonds

4) Cut the cold butter into small pieces. Mix together with both hands into the flour. Rub the butter onto the flour to make ‘coarse’ mixture. Small pieces of butter will still remain.

5) Add the whipped topping (keep 2tsp aside for brushing later), vanilla, chocolate and combine everything together. Do not overmix. The mixture should still look ‘Coarse’ and hold together only when pressed between both hands.

7) Roll the ball on a flat surface to about 1-2 inches thick.

8) Cut into wedges like a pizza with sharp knife and place on buttered cookie sheet

9) Brush the scones with cream/whipped topping.

10) Bake at 325F for about 20-25 mins. The bottom of the scones should turn slight golden, but the top remains cream colored.

11) Serve as breakfast, snack with tea/ coffee, jam, marmalade, fruits etc.

"Sweet Treats"- Nankatai ( Indian sugar-butter cookies)




So far through the pregnancy, I have craved the foods that we made and used to get in India. All the tempting chaats, mouthwatering spicy- tangy dishes and some(few) Indian sweets and desserts. Nankatai was one of my favorite cookies as a child. And it happens to be 'M''s too ( as a kid , he called those 'Nankati- taai'  cookies...LOL!!) So few years ago, when M's parents visited us here in USA, M's mom taught me this recipe. It was so easy , quick and gave us the taste of 'Nankatai' here in USA....  away from India. Like parents-like son......'E' loved the 'Nankatta cookies' (as he calls them) and munched on them throughout the day!
Nankatai has a sugar- butter- flour base and then you can jazz it up with whatever nuts and flavors you want. But a typical nankatai will be ' creamish white' in color and may or maynot have any nuts. When you bite into this blissfull cookie it just melts in your mouth....

Ingredients:
3/4 cup Unsalted butter
1 cup powdered sugar
1 and 1/4 cup all purpose flour ( approx)
1tsp vanilla essence
1tsp baking powder
Nuts like Cashews, Almonds, chopped Pistachios

Method:
1) Fold room temp butter till very smooth.No lumps should be seen.
2) Mix powdered sugar,vanilla essence
3) Add the all purpose flour(mixed with baking powder) spoon by spoon, to make a smooth dough.Use only as much needed to make smooth dough.
4) Roll into small balls (about size of a 'Pedha' )
5) Garnish with the nuts.Or make a 'grid' or 'Tictactoe' like design on top of the cookie with a knife and garnish with pistachios.
6) Preheat the oven to 250F. Place the nankatai on cookie sheet with some space between each of them.They will 'spread' will baking.
Bake at 250 F for 20 mins. Watch out! They will burn from the bottom easily.You don't want to darken them.
7) Makes about 40 Nankatais.Store in airtight container.
Enjoy this buttery-sugary..'Melt-in- your-mouth' cookie with a cup of hot tea/ coffee

"Around the World in 30 Weekends"-Weekend 4= Greece

Dish Name: Baklava Cups


Baklava is the most famous of the Greek pastries, and every area of Greece - and sometimes every family within a region has their own version.
Baklava is a pastry made of layers of phyllo dough filled with chopped nuts and sweetened with syrup or honey.
When I decided to take on the project of making Baklava, I decided to take on the ‘short and easy’ route. I thought, a newbie like me, should start by making this ‘easier’ version and then once I master it, try to take on the ‘authentic’ recipe.
I had seen this recipe on Food network in Sunny Anderson’s show. She uses Phyllo dough cups instead of the phyllo dough sheets. Since last week, I had been searching for Phyllo dough cups, but none of the grocery stores carried them. They said they will only stock those in ‘holiday season’ beginning end of October. But yesterday, to my ‘good luck’ I found those in TOPS and hence could plan my trip to Greece this weekend! Another reason to try our this recipe on this weekend was...if it turns out good...I can make it for upcoming Diwali! Just another 'Sweet' addition to all the other Diwali spread!

Here is Sunny Anderson's Recipe:
Ingredients :•1/2 cup pistachios
•1/2 cup walnuts 1/2 cup almonds 1 lemon, zested
•1/4 cup, plus 3 tablespoons sugar
•2 tablespoons butter, melted
•1 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 teaspoon vanilla extract 2 boxes mini filo shells, 15 shells each
•1/2 cup water 1/4 cup honey

Method:Special equipment: 2 (12-cup) mini cupcake pans, food processor
1) Preheat oven to 350 degrees F. Place pistachios, walnuts and almonds on a baking sheet and toast in oven until golden and fragrant, about 8 minutes.
2) Let nuts cool slightly and add to a food processor along with the lemon zest, 3 tablespoons of sugar, butter, cinnamon, salt, and vanilla and pulse to combine.
3) Place mini fillo shells in wells of 2 mini cupcake pans. Add 1 teaspoon of the nut mixture into each shell. Bake until filling is hot, about 10 minutes.
4) Meanwhile, in a small saucepan over medium heat add the water, 1/4 cup sugar and honey and bring to a boil. Reduce heat to a simmer and cook until reduced and slightly thickened, 8 to 10 minutes.
5) Pour 1 teaspoon syrup into each cup and allow it to soak in, then repeat with another teaspoon.
6) Refrigerate at least 5 hours, or overnight. ( I do not know why this has to be done? But I chilled mine anyways!!)
My Variations:
1) Used regular muffin pans instead of mini (Because I did not have the mini muffin pan)
2) Used cashews along with other nuts
3) Used orange zest instead of lemon zest
4)Did not add any butter to the nut mixture (counting calories you see!)
5) Did not add vanilla extract (the recipe already had other strong flavors like cinnamon, lemon/orange zest so decided to leave out vanilla)
6) Would add only 1tsp of honey-sugar syrup to the cups.2 tsp turned out little too sweet.
7) Garnished with orange zest
