Watermelon-Mint-Feta cheese Salad

Nothing says 'summer' better than a slice of cold watermelon!!!

Try this refreshing and delicious 'Watermelon- Feta-Mint' salad for a cool summer side dish.

Recipe:
2 cups chopped watermelon 
1 tbsp Feta cheese
Few mint leaves
Dressing- 1 tsp olive oil, 1/2 tsp balsamic vinegar, salt, ground black pepper

Toss everything together and serve!

'Green Pepper and Feta cheese' Spicy "Caterpillar" rolls

"Caterpillar rolls"......don't they look sort of caterpillars? Well I don't know..what else would you call this shape?
I had seen someone make these and post pictures on the forum I follow on facebook...'ChefatLarge'. I thought the idea was really cool ...the way you shape this dough...and couldn't wait to try it out.
I had some 'biscuit dough' in the refrigerator.I used it to make these "cheesy spicy caterpillar rolls'.
Ingredients:
1  can biscuit dough
Cooking oil spray
2tsp  olive oil
flour for rolling dough

Filling:
1/2 cup chopped Green pepper
1/4 cup chopped onion
1/4 cup feta cheese
1/3 cup mozzarella+ cheddar cheese shredded
1/2tsp red pepper flakes
1/4tsp black ground pepper
salt

Method:
1) Separate the biscuit rounds from the can.
2) Mix together the green pepper,onion,cheeses and other ingredients.No need to cook..they will cook in the oven when the rolls bake.
3) Pre heat the oven to 400F
4) Roll out the dough into circle, place a spoonful filling at the top end. Fold the top side upto the center

5) To the bottom half of the dough, cut into strips
(In the pic below, the upper half is yet to be folded )
6) Drape the strips around the folded upper part of the dough
7) Place on greased cookie sheet ( sprayed with oil spray)
8) Drizzle with olive oil and bake at 400F till golden..about 10-12 mins.
9) Serve hot along with Maggie hot and sweet sauce.

"Everyday Cooking"- Spinach-Red Onion-Feta Cheese Pizza

There is nothing satisfying like Hot 'Out of the oven pizza'....with the Cheese bubbling all over it...with your favorite toppings and done just the way you love it!! The delivery/ take out won't give you this satisfaction. Moreover...it's fun to play with the toppings on the pizza.....try various combinations..some typical some not so typical. I feel even the 'layering' matters.If you put one topping on the other...or vice versa..the taste changes! Yes...try it yourself!
Ingredients:
1 ready to bake Pizza crust (or make your own!)
1/2 cup Pizza sauce/ Crushed tomatoes with added some Italian herbs
1 cup fresh Spinach leaves
1/2 Red onion sliced in rings
1/2 tsp minced garlic
1/2 cup Shredded Mozzarella cheese
1/4 cup Feta Cheese
1/2tsp Pizza seasoning/ Oregano+Basil etc
1/4 tsp Red pepper flakes( add more for spicy pizza)
1/4 tsp Black ground pepper
1tsp olive oil

Method:
1) Pre heat oven as per the Pizza crust instructions.
2) Brush the crust with olive oil
3) Spread the pizza sauce .Sprinkle the minced garlic
4) Spread half of the spinach leaves. Add half of the mozzarella. Add the rest spinach leaves and then the mozzarella.
5) Place the sliced onion rings.Add the feta cheese, pizza seasoning,black ground pepper, red pepper flakes.

6) Bake 7-8 mins and then broil for 1-2 mins until the cheese is bubbly and starts to brown.
7) Serve HOT OUT OF THE OVEN!

"Everyday Cooking"- Field Green Salad with Nectarines,Gloden Raisins,Nuts and Feta cheese

I was a pretty 'healthy' eater until I was pregnant with 'A'. I had severe aversion towards some foods in pregnancy and ate only what 'comforted' my stomach.Now you know what comforts a stomach don't you?????.....Calorie rich... Carbohydrate rich foods!! I ate cold sweet cereals and milk 3 times a day, I ate warm cheesy pastas, steaming hot rice with ghee ...
Now, I am trying to get back on track. I highlighted trying....because IT IS DIFFICULT to give up all that good food!!!! But with inspiration from my new friends 'G' and 'S'...the path to 'healthy eating ' seems 'walkable'!

Ingredients:
Any field greens of your choice like -Romaine lettuce, Arugula with Radicchio etc
2 unripe Nectarines (The juices will run out if they are too ripe)
Handful of toasted Almonds and Walnuts
1 tbsp golden raisins
1tbsp Feta cheese
1 tbsp Low fat 'Thousand Island dressing'- only a slight drizzle (I like its creaminess with fruits and nuts...but you can use 'Vinegrette' style dressings too)
Salt
Black pepper

Method:
1) Wash all the greens and chop.Drain well
2) Slice the nectarines.
3) Put everything together and add salt and pepper and Dig in!
