'Paneer Chili' and 'Tandoori Gouda' Paninis



This was the 'Valentines dinner' for us--- Paneer Chili and Tandoori Gouda(cool isn't it..I found it at Jungle Jims!) Paninis, Roasted Veggies and for dessert ..Tiramisu!!.
I couldn't wait to get my hands on to the "Tandoori Gouda".I kept wondering all week after we bought it from Jungle Jims.... how it will taste??? It was 'orangish' in color with little specks of red chilies(like in Pepper jack cheese). It was mildly spicy with a slight hint of 'coconut' taste. All in all...I LOVED it!!!
Ingredients:
Paneer Chili :
1 cup Paneer cubes
1/2 tsp Ginger garlic paste
1 onion thinly sliced
1/2cup Green pepper sliced
2 green chilies sliced
1/2tsp Kitchen king masala
1tsp chili powder
1tsp cumin-cilantro powder
1/2tsp cumin
salt
oil
chopped cilantro 

Italian bread
Tandoori Gouda cheese sliced
 Maggie hot and sweet sauce

Method:
1)Heat 2tsp oil, add cumin, onion,green pepper and chilies. Fry for 2 mins.Add the Paneer cubes and rest of the spices. Mix and saute for 2-3 mins.Keep aside
2) Cut the Italian bread into thick slices
3) Heat the Panini grill
4) Apply hot and sweet sauce on a slice, add 2tbsp Paneer chili, Tandoori gouda slices and some chopped cilantro.Put the bread slice on top.
5) Grill with slight oil spray till grill marks are seen and the cheese starts to melt.
6) Cut and serve Hot!!

Mediterranean Panini with Roasted Red Pepper Hummus, Veggies and Feta cheese

From last weeks Halloween party, I had quite a bit of hummus left over. I had made the "Bug Crostini" for the party with Roasted Red Pepper Hummus.(http://my-kitchens-aroma.blogspot.com/2012/10/the-sizzle-from-guest-kitchen-guest.html)
 I was running out of ideas to use up the hummus.'S' told me about the "Panera Bread Mediterranean Panini" ,that she has , when she goes to Panera. Last night I pulled together all the Mediterranean ingredients and made this delicious healthy Panini for dinner!!
Ingredients:
4 Sub style rolls (or Use wheat rolls)
8 tsp Roasted red pepper hummus( http://my-kitchens-aroma.blogspot.com/2012/10/the-sizzle-from-guest-kitchen-guest.html)
Fresh baby spinach
sliced olives
sliced cherry tomatoes
sliced red onion
4tsp Feta cheese
few slices of mozzarella cheese
red pepper flakes
ground black pepper

Method:
1) Heat a grill pan on medium heat
2) Cut the sub roll in half. Slather both inner sides with red pepper hummus
3) Arrange the mozzarella cheese,spinach, onion, olives, tomatoes,feta cheese, sprinkle with black pepper and red chili flakes

 4) Toast the sandwich on both sides by applying pressure , till grill marks are visible

 5) Slice in half and serve hot with a soup or salad.A delicious and healthy Panini is ready!!

"Everyday Cooking"- Egg Bhurji Pav/ Spicy Egg Scramble Sandwich

Amongst the 'street foods' in Pune, this one is probably not a very famous one.Mostly because it is sold on 'not so fancy' carts and also sold mostly outside ' drinking bars'.We made 'Egg Bhurji' many times back home and had it mostly with chapati.It was so quick, tasty and high protein food.
The other day, I wanted to make a 'fancy' sandwich for dinner.I thought..why not 'up-notch' Bhurji-Pav , give it a 'Make over' and make it into a 'fancy' sandwich!!!
Ingredients:
For all the vegetarians out there:  Use Paneer to make 'Paneer Bhurji' instead of eggs.
 
Eggs Bhurji/Spicy egg scramble:

4 Eggs
3/4th cup Chopped onion
1/2tsp turmeric powder
1tsp Chili powder
1/2tsp Chicken masala/ Kitchen King masala
1/4th tsp Black ground pepper
1tbsp Chopped cilantro
oil
Salt

Toppings:
1/4th cup sliced red pepper
1/4th cup sliced green pepper
1/2cup sliced onions
1/4th cup shredded cheddar cheese
1/4th cup Maggie Hot and Sweet sauce( I loveeeee this sauceeee!!!!)

4 Brat Buns

Method:
1) Stir fry the sliced red,green pepper and onions for couple mins.Season with salt and black pepper.Keep aside.
2) In 1 tbsp oil, fry the chopped onion till for 3-4 mins, add the chili powder,chicken masala, black pepper,salt and add the eggs one by one.Keeping stirring to get a good scramble.Cook till well done.Add the chopped cilantro.
3) Cut open the Brat bun, add  the green and red peppers, onions,eggs bhurji.Top with cheese and maggie hot sauce


4) Heat a grilling griddle and grill the sandwich ( on little butter if you like) till it gets the grilling marks.
5) Serve this Spicy Sandwich ....Hot hot hot!

"Fusion Cuisine"- Paneer Chili,Grapes and Asiago Cheese Loaf Panini


A Sandwich gone a bit 'Wrong'....
I had a great lunch at my favorite restaurant....'Panera Bread' with some friends.I love all of their Paninis and soups.....I am on a mission to try each one of them, every time I visit Panera! While coming back I picked up this loaf of 'Asiago Cheese Loaf' from Panera.

While driving back, all I could think was....what kind of Panini can I make from this? Came home ...found 'Paneer' in the freezer and I knew what I was gonna fix for dinner! Paneer Chili, Grapes and Asiago Cheese loaf Panini!!! Sounds exotic isn't it!!!!

What went wrong then?: Did not taste the bread before making the sandwich.The bread had kind of a strong 'cheesy' and mild 'tart' flavor.The bread on it's own would taste good but it over-powered the Paneer Chili filling and the whole combination did not quite come together as I thought it would :(

BUT.......Make this sandwich with a plain Italian bread or a french bread...and I guarantee...IT WILL BE A WINNER!!!!!

I added few extra veggies: Carrots, Corn this time
How to make the Panini:
1) Slice the bread into 'thick' slices
2) Slice the grapes into halves. The grapes offer a surprise 'pop of sweet-sour' flavor when you bite into the sandwich.
3) Place spoonful of filling onto the bread, top it with your favorite shredded cheese,sliced grapes and place another slice on top.Grill the panini on a grill pan.Panini maker/ plain pan. Serve hot!

"Fusion Cuisine"- Tofu Tikka Panini

'Panino'/Panini' in Italian means 'small bread rolls'. They are filled with cheese, ham, salami etc and sometimes grilled.The bread is usually ciabatta or rosetta.
In the quest of 'What to make for dinner'...I put together this sandwich.I used what I had on hand thus creating a 'Indianized grilled Panini'.
Ingredients:
1 loaf Italian bread

For Tofu Tikka:
(This recipe will work great with Paneer too)
1 pkg 'extra firm' tofu drained and dried with paper towels
1 tsp yogurt
1tsp Kitchen king masala/Tikka masala
1/2tsp ginger garlic paste
1/2tsp chili powder(add more for spicy tikka)
1tsp Maggie hot and sweet sauce
1 tsp chopped cilantro
2tsp corn starch
salt
oil

For the toppings:
1/2 cup Sliced onions
1/2 cup Sliced green peppers
1/4 cup Broccoli florets
Black pepper
salt
Slices of Pepper jack/Jalapeno jack Cheese
Butter
Slices of tomatoes

Method:
1)Tofu Tikka: Mix together yogurt, kitchen king masala, chili powder, ginger-garlic paste, salt, hot and sweet sauce. Cut Tofu into bite size pieces.rub corn starch on the tofu.Marinate with the above sauce.
Keep aside for 1/2hr
2) Saute the marinated tofu in non stick pan till golden brown on all sides.Keep aside.

3) Saute onions,green pepper and broccoli with little oil, salt and pepper.Keep aside.
4) Cut the italian bread horizontally. Apply butter on the inside.
5) Lay slices of cheese, sauted onions,green pepper, broccoli and then tofu tikka and tomato slices.Add more cheese if you like.

6) Grill the sandwich on a hot grill pan with little oil. Press with heavy pan to get the 'pressed panini' or use a 'Panini Press'
Serve hot!

                              Enjoy the 'crusty' Panini with its Spicy Tofu tikka filling!
