Cranberry Lemon Baklava Tarts

'A and A' had their 'house warming' party last month. A had decided a perfect "Mediterranean' menu and had planned an awesomely delicious menu of Chicken Kabobs, Biryani, Veggie skewers, Crostini (recipe coming soon) and for dessert were these "Sweet, crunchy, tiny and prettiest little "Cranberry Lemon Baklava Tarts"

They were sweet and tart from the honey and cranberries,nutty from the walnuts, crunchy from the Filo Cups, lemony from the lemon juice and topped with smooth sweet and tangy Greek yogurt....a heaven in one bite. It was such a 'light and refreshing' dessert after the meal!!!
A had forwarded me the recipe and I gave it a try...and the results were delightful and tasty!!

"Sweet Treats"- Fruit Custard in Filo cups

For last weeks Potluck, I was in charge of making the dessert.Potlucks are a lot of fun, especially since, you get to meet everyone and also taste variety of good food. Needless to say, it adds 'happy pounds' on you!!!
So the menu for this weeks potluck was...2 types of pastas, a soup, a salad and then a dessert.Everything tasted good and we had a satisfying meal at 'V''s new house.
Ingredients:
For Fruit Custard

Milk
Custard powder of your favorite brand and flavor
Fruits cut into bite size pieces: Apples,peeled oranges,Pineapple, grapes, bananas
Handful of chocolate chips
Vanilla essence
Sprinkles for decoration

1) Make the custard according to directions on the custard powder can.Let it cool
2) Add the Vanilla essence,chopped fruits,chocolate chips and chill in refrigerator.

Phyllo/Filo Dough Cups:
6 Phyllo sheets
2tbsp melted butter
muffin pans
1) Thaw the filo dough as per packet directions
2) Place 1 rectangular sheet of filo on cutting board. Apply melted butter gently with a brush.Apply through the whole sheet. Be gentle, otherwise the sheets will tear.

3) Place next sheet on top of this buttered sheet.Apply butter.Repeat the same and stack all sheets on top of one another.Cut into 6 squares and place them in muffin pans.
 4) Bake at 350F for 8-10 mins till golden brown.Check packet for exact baking time for that brand of filo dough.

5) Let the filo cups cool before filling with fruits custard.
6) Just before serving, fill the cups with cold Fruit custard till the top and garnish with sprinkles.
The crisp buttery filo along with chilled creamy fruit custard gives a wonderful explosion of textures in every bite!

"Appetizers"- Corn in Phyllo cups

I love Phyllo dough and I love Corn....put them together... and I have this 'Lovable' appetizer or 'anytimetizer'!!!
Both 'Phyllo dough' ( Phyllo, filo, or fillo dough is paper-thin sheets of raw, unleavened flour dough used for making pastries in Middle Eastern and Balkan cuisine) and 'Corn' are so versatile you can use them in so many different ways.

One more 'awesome' thing about Phyllo dough is that due to the 'food industry's' blessing we have already rolled- ready to bake- Phyllo dough sheets and cups, readily available.Otherwise think, what if you had to make the paper thin dough yourself...ufff! 
When I am short on time, I use the 'ready to bake' mini filo cups'.They are perfect to make bite size- single serve appetizers. Busy Girls best friend!
Ingredients:
Filling: ( The filling can be used to make Corn bhel topped with chopped onions, tomatoes,tamarind chutney or serve just as is or with a squeeze of lemon)


1/2 cup thawed corn kernels
1/4tsp garam masala
1/4 tsp red pepper flakes
1/4 tsp mustard seeds
salt
oil

For 'corn in phyllo'
15 ct mini phyllo cups
1tbsp hot and sweet sauce
1/4 cup chopped onion
1 tbsp chopped cilantro
1tbsp fine sev


Method:
1) Bake the phyllo cups according to packet instructions( I warm them up in the oven at 350F for 3-4 mins) to make them crisp.
2) Heat oil in the pan, add mustard seeds, corn kernels, garam masala,salt red pepper flakes and toss till warmed through.Let it cool.The filling should be somewhat dry.
3) To the baked phyllo cups, add 1 tsp corn filling. Top off with hot and sweet sauce, onion, sev and cilantro. Can add tomatoes too.


     Enjoy the crisp phyllo cups with the corn filling with tangy sauce and crunch onions and sev!

"Sweet Treats"- Phyllo cups with Yogurt and Fruits

The long weekend was very much relaxing.We did not travel anywhere....but.....met friends, ate, watched movies, slept.Sometimes.... that is all what you are looking forward too!
So, we were going to have 'P-V-K' over for lunch yesterday.I planned a simple menu and a simple dessert.
It's fun to keep it 'casual' when you have friends over. That way everyone is comfortable and relaxed.
Sometimes 'simple' foods are the ones which are comforting and give pleasure.Infact as kids.....even a small 'M and M' or 'Bread and Jam' sandwich is all you need to get a smile on that face! It is so easy to make kids happy.I have seen 'E' enjoy the 'simplicity' of life! Happinesss comes to him in 'simplest' things!
And that's true.....as they say: Life's Greatest pleasures can often be the 'Simplest' ones!
So....
I put together this 'simple' dessert to end  the meal. It is very easy, quick, 'not too sweet' and looks very pretty! Love the crunch of the phyllo cups and contrast it gives to the smooth creamy texture of the yogurt!

Ingredients:(For making 6 cups)
6 sheets of Phyllo dough ( thawed to room temp)
1tbsp melted butter
2 cups flavored yogurt of your choice (I used 'Raspberry' and 'Vanilla' flavors)
1/2cup Pineapple cut into small pieces( I used 'Dole' canned pineapple)
1/4cup Pomogranate

Method:
1) Carefully unfold phyllo sheets.They are paper thin, so be gentle.
2) Place 1 sheet on a big flat surface.Brush lightly wth melted butter.Place 2nd phyllo sheet on top.Smooth out.Brush with butter and place the next sheet.Repeat for the remaining sheets.
3) Cut out 6 squares from sheet and place them in 'muffin' pans, to create 'cups'.


4) Bake at 350F for 15 mins till the cups are golden brown in color.Let them cool.
5) Just before serving: Place 2-3 spoonfulls of yogurt in the cups, top with fruits.

6) Dig in the crisp phyllo cup and enjoy the  'crunch' along with 'smooth creamy cold sweet ' yogurt and fruits!

"Around the World in 30 Weekends"-Weekend 4= Greece

Dish Name: Baklava Cups


Baklava is the most famous of the Greek pastries, and every area of Greece - and sometimes every family within a region has their own version.
Baklava is a pastry made of layers of phyllo dough filled with chopped nuts and sweetened with syrup or honey.
When I decided to take on the project of making Baklava, I decided to take on the ‘short and easy’ route. I thought, a newbie like me, should start by making this ‘easier’ version and then once I master it, try to take on the ‘authentic’ recipe.
I had seen this recipe on Food network in Sunny Anderson’s show. She uses Phyllo dough cups instead of the phyllo dough sheets. Since last week, I had been searching for Phyllo dough cups, but none of the grocery stores carried them. They said they will only stock those in ‘holiday season’ beginning end of October. But yesterday, to my ‘good luck’ I found those in TOPS and hence could plan my trip to Greece this weekend! Another reason to try our this recipe on this weekend was...if it turns out good...I can make it for upcoming Diwali! Just another 'Sweet' addition to all the other Diwali spread!

Here is Sunny Anderson's Recipe:
Ingredients :•1/2 cup pistachios
•1/2 cup walnuts 1/2 cup almonds 1 lemon, zested
•1/4 cup, plus 3 tablespoons sugar
•2 tablespoons butter, melted
•1 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 teaspoon vanilla extract 2 boxes mini filo shells, 15 shells each
•1/2 cup water 1/4 cup honey

Method:Special equipment: 2 (12-cup) mini cupcake pans, food processor
1) Preheat oven to 350 degrees F. Place pistachios, walnuts and almonds on a baking sheet and toast in oven until golden and fragrant, about 8 minutes.
2) Let nuts cool slightly and add to a food processor along with the lemon zest, 3 tablespoons of sugar, butter, cinnamon, salt, and vanilla and pulse to combine.
3) Place mini fillo shells in wells of 2 mini cupcake pans. Add 1 teaspoon of the nut mixture into each shell. Bake until filling is hot, about 10 minutes.
4) Meanwhile, in a small saucepan over medium heat add the water, 1/4 cup sugar and honey and bring to a boil. Reduce heat to a simmer and cook until reduced and slightly thickened, 8 to 10 minutes.
5) Pour 1 teaspoon syrup into each cup and allow it to soak in, then repeat with another teaspoon.
6) Refrigerate at least 5 hours, or overnight. ( I do not know why this has to be done? But I chilled mine anyways!!)
My Variations:
1) Used regular muffin pans instead of mini (Because I did not have the mini muffin pan)
2) Used cashews along with other nuts
3) Used orange zest instead of lemon zest
4)Did not add any butter to the nut mixture (counting calories you see!)
5) Did not add vanilla extract (the recipe already had other strong flavors like cinnamon, lemon/orange zest so decided to leave out vanilla)
6) Would add only 1tsp of honey-sugar syrup to the cups.2 tsp turned out little too sweet.
7) Garnished with orange zest
