Samosa Pinwheels


One of my favorite party appetizers are these beautiful looking and amazingly tasty 'Samosa Pinwheels'. What's not to like??? Nothing can go wrong with ...Spicy stuffing made with mashed potatoes and warm spices rolled up into puff pastry sheets and then baked to crispy perfection! YUMMMMM..OOO! Baked a large batch for a party at work tomorrow.




The trick however, is getting this beautiful pinwheels pattern. I have had these pinwheels before and not all were able to exhibit this beautiful pattern. So here goes the step by step recipe-

 ** The trick in using 'lump free' filling, spreading it in an even layer and rolling into a tight roll before slicing.




Recipe:
4 Potatoes boiled and washed well (no lumps)
1/2 onion finely chopped
2tsp ginger garlic paste
1tsp chopped curry leaves
1 tsp garam masala powder
1tsp red chili powder
1/2 tsp mustard seeds
1/2tsp cumin seeds
1/2tsp turmeric powder
1/2 tsp Kasoori methi leaves
Salt
4tsp Oil

1 Puff pastry sheet (Thawed as per package instructions)

Method:
1) Heat the oil in pan. Add mustard seed, cumin seeds, curry leaves and chopped onion. Sauté for 2-3 mins.
2) Add ginger garlic paste, turmeric, red chili powder, garam masala powder, mashed potatoes, salt and kasoori methi. Sauté the filling for few mins. The filling should have no lumps. Let the filling cool for 1hr.



** Pre Heat the oven to 400F

3)  Roll out the thawed puff pastry sheet. Spread the potato filling evenly on to the sheet, about 1.5cm in thickness. Start rolling the sheet tightly from one end, into a roll.


4) Slice the roll in the center. Wrap the rolls into wax paper and chill in refrigerator for 20mins.

5) After 20 mins, slice the roll. Place the pinwheels on a baking sheet sprayed with cooking spray.


6) Bake the pinwheels at 400F for 15-20 mins till golden brown. I like to turn them half way through the baking on the other side to bake evenly on both sides.


7) Serve hot along with your favorite sauce. Enjoy these delicious beauties!

And...You know my favorite! I will of course serve these with "Maggie Hot and Sweet" Sauce :))

"Appetizers"- Quick Puff Pastry Cheese Straws

Looking for a quick appetizer or a side dish???? This one is sure to please you!
Puff Pastry is my favorite ingredient to work with.You can make either sweet or savory dishes with it, it readily available in USA, tasty delicious..buttery..flaky and you can mould it into so many shapes and wow your guests...
Ingredients:
1 sheet Pepperidgefarm puffpastry sheet
1/2  to 1/3rd cup grated Parmesan cheese
1tsp Italian seasoning
1/2tsp dried Basil
1/2tsp Red chili powder
1/4tsp black ground pepper


Method:
1) Thaw the puff pastry sheet as directed.Pre heat the oven to 400F
2) Cut the puff pastry into thin strips with a knife
3) With one end in each hand , twist the strips to get to spiral shape.
4) Mix together the cheese, seasoning, chili powder, black pepper in a large plate
5) Roll the spirals/straws into the cheese and place on baking sheet as you make them.
6) Bake for 15 mins or till golden brown.
7) Serve with your favorite dipping sauce like- Marinara sauce, Sundried tomato Pesto etc.

"Appetizers"- Paneer-Spinach Puffpastry Pinwheels


'Puff pastry' is my favorite 'tea time/ breakfast time/ snack time/ anytime....favorite thing to bake!!!!It is an 'Anytimetizer'!!! With all the help available from 'Pepperidgefarm'...baking Puff pastry is a breeze.

 Recently I invited some families over for 'tea' on different weekends.' Puff pastry' was on the menu for each one of them.'M' actually joked that if they meet each other and talk about our meeting over 'tea', they all are going to find out that I made the 'same menu' for them !!!

Paneer-Spinach Pinwheels:
Filling:

1 and 1/2 cup Thawed,drained(well) frozen Spinach
1 cup grated Paneer
1/2tsp Garlic paste
1/2tsp Garam masala
1/2tsp Red pepper flakes
1 tbsp Bread crumbs(to soak any extra moisture in the filling)
salt


Method:
1) Squeeze the Spinach to remove all the water (you can add this water to soups, curries etc)
2) Mix all the ingredients.
3) Thaw the puffpastry sheets as on packet directions.
4) Fold and fill the Pinwheels-

"Appetizers"- Puff Pastry 'Pinwheels' with Spinach-Corn-Ricotta Cheese Filling


Awesome Discovery:
Usually I never get to watch TV in the the mornings.....too busy doing other things.But last week, 'E' did not have to go to his nursery pretty much all last week.So,one morning after engaging him in 'Painting' activity,I turned on my favorite channel.....Food Network.It was Michael Chiarello's show and he was making these amazing little appetizers from Puffpastry stuffed with pesto and sundried tomatoes. He was folding the puffpastry into 'Pinwheels'. I thought they looked really cool and couldn't wait to try them out. I first tried the shape on a paper..just to make sure...I could get it right...
For the filling: I made a different filling though.....with Spinach,corn and ricotta and parmesan cheese. I was little skeptical whether my filling will taste good,whether the Ricotta will melt and ooze out,whether the frozen spinach will be too wet for the puffpastry......but no.....the Spinach-Corn-Ricotta Pinwheels came out PERFECT!!!
Crunchy on the outside....soft creamy filling on the inside.....JUST DELICIOUS!!! I would rate these as one of the best appetizers I ever had!
I was soooooo happy with myself yesterday....
When 'M' came back from work last evening....after seeing the pinwheels his reaction was...."WOW...they are soooo beautifull !!!
I took pictures as I was doing each step ....so everyone can try these out ASAP!

Ingredients:
1 Sheet Pepperidge farm Puff pastry sheet
For the filling:
1/2 cup frozen spinach
1/4cup frozen corn kernels+ 1tbsp corn
1 tbsp Ricotta cheese
1/4cup grated parmesan cheese (gives nice nutty,salty taste)
1/4tsp garlic paste
1/4tsp black pepper
1tsp Bread crumbs (so soak extra liquid in the filling)
1 pinch nutmeg
1 pinch red pepper flakes
salt
 Microwave the Spinach and Corn for 4 mins in the microwave untill thawed.Drain any excess liquid.Mix with the cheeses, black pepper, red pepper flakes, bread crumbs, garlic, nutmeg,salt etc.Keep refrigerated till ready to use.
Method:
1) Thaw the puffpastry as per packet directions. Cut the sheet into 9 squares.Cut each square on all the 4 corners diagonally about 1 inch in.

2) Place a spoonfull filling in the center of the square. Start folding each corner towards the center of the square,onto the filling. This is the pinwheel shape.
3) Press all the four folded corners neatly but gently into the center and press some corn kernels in the center.This helps in keeping the corners in place and looks pretty too!
4) Bake at 350 F for about 20 mins till the pinwheels turn crisp and golden brown.
5) Serve warm with Ketchup/Hot and sweet sauce. Enjoy the crisp flaky pastry with smooth creamy filling!

Variations:
1) Puff pastrries are pretty versatile and can be filled with savory as well as sweet fillings.
Fruits cut up and mixed with ricotta cheese can be used as filling.For garnishing strawberries/cherries can be tucked in the center.
2) Cooked ground chicken spiced with garam masala and mint can be used as filling.Use 'cherry tomato' to tuck into the center.
3) Spiced potato filling with garam masala,mint,cumin with 'peas' tucked in the center.

"Appetizers"- Spinach-Cheese Swirls


How many times have you actually read the 'Recipe Ideas' which are printed on the carton when you buy something? For me atleast...not many times.I am pretty much decided what I want to cook before I open... or sometimes... even before I buy the ingredient.So very few times have I actually read a recipe and saved it.This one is.... one of those few times!
I was looking for a 'appetizer' recipe for a dinner party at my house.We had invited our friends and their parents visiting from India.Now, I did not want to make the same old typical appetizers...pakodas,vadas,samosas etc especially because I wanted to make something 'new' for my friends parents.So while searching for a 'novel' appetizer....I came across this recipe...Where???.....In my freezer! Hahaha!
I had some Pepperidge Farm puff pastry in my freezer.Just before making my weekend brunch favorite 'Veggie puffs' ,I happened to look at this recipe on the back of the box.And Tadah!!!!! I had the appetizer recipe idea for the dinner party the next week! Everyone devoured it and none was left over after the party!
Here is the recipe from Pepperidge Farm Puff Pastry Carton: (I modified it a little bit to suite our taste and for my convenience)
Ingredients:
1 Puff pastry sheet
1 bag Spinach,cooked and well drained OR Use frozen-thawed and well drained
3/4 cup Pepper jack cheese
1/4 cup Parmesan cheese
1 onion chopped
1/2 tsp garlic paste
1/4tsp Black pepper
1tsp oil
1 egg
1tbsp water
1/2 tsp red pepper flakes
Salt to taste

Method:
1) Thaw Puff pastry sheet as per packet instructions and preheat oven to 400F
2) Heat 1tsp oil, add garlic paste stir.Add chopped onions and fry for 2 mins.Add the cooked, well drained spinach,salt and fry for 2 more mins.Let it cool.
3) Beat 1 egg and mix 1tsp water - use for brushing puff pastry
4) Add the cheeses,red pepper flakes,black pepper to the Spinach mixture and mix well.
4)Unfold puff pastry on lightly floured surface.Brush with egg mixture.Top with spinach and cheese mixture.Spread evenly.
5) Starting at the short side closest to you,roll like a jelly roll.Cut horizontally into 20 slices.
6) Place slices,cut side down on baking sheet ( sprayed with cooking spray).Brush with egg mixture.
7) Bake for 15 mins or until golden brown.
8) Serve warm with Ketchup/Hot chili sauce.

I actually made the rolls and slices the day before the party and froze them on a baking sheet in the freezer.On the day of the party,half hour before I wanted to serve it,I just popped them in the oven and ....Voila! We had our delicious Spinach Cheese Swirls!

"Everyday Cooking"-Veggie Puffs/Pattice


If anyone asks me..what was my favorite weekend breakfast back in India(Pune)? The answer will be the 'pattice' from Green bakery!
It used to be kind of a 'delicacy',because these bakeries will only make those on certain days of the week..and that too you have to stand in a queue to get this on busy weekends!
And ya...there were weekends when we went to the bakery a little late in the morning....and they ran out of the pattice.''Pattice NOT Available' the board would say.How heartbreaking was that!They were 'so' much in demand!
Even now,when 'M' and I go back to India,one of our 'culinary' agendas is eating the Green bakery pattice. They make such a flaky pastry stuffed with spiced potatoes and peas. We even make use of our 'jet lag' and wake up early and walk to the bakery very early in the morning to buy the pattice. 'M' always has one question.....if they are 'so' much in demand ...and they run out of the pattice early in the mornings itself.....then why don't they make more of those???????
They should work out their 'Supply-Demand' equation again!(His MBA is speaking here!)
Here in USA...you don't get the pattice anywhere....but you do get the Puff pastry.I tell you..I was so glad when I discovered that! So I started making my own 'veggie puffs' ...close enough to the 'green bakery way'!
Ingredients:
1 packet Pepperidge farm puff pastry
2 boiled potatoes mashed well
3/4 cup boiled green peas
1 tbsp chopped onion
1/2tsp garlic ginger paste
1/2tsp Garam masala
1/4tsp turmeric powder
1/4tsp chili powder
1/4tsp cumin-coriander powder
5-6 curry leaves
1/4tsp fennel seeds
1/4 tsp mustard and cumin seeds
2tsp oil
Salt to taste
Method:
1) Thaw the puff pastry sheets as instructed on the packet
2)Preheat oven to 400F
2) Heat 2tsp oil,add mustard, cumin,curry leaves and fry for few secs.Add ginger garlic paste,turmeric powder,chopped onion and fry.
3)Add the mashed potato,peas,chili powder,garam masala,cumin coriander powder,fennel seeds, salt,and mix all together.Fry till everything warm ups.
4) Cut the puff pastry sheets in desired shape.Stuff with the above stuffing.I usually make 'triangle' puffs (like green bakery),but this time made the rectangle ones.
Press the edges with a fork and place on baking sheet.
5) Bake for about 25 mins or till golden brown and flaky
5) Serve warm with Ketchup/ mint chutney
Variations:
Very versatile and can be stuffed with 'anything'.....spiced shredded boneless chicken, egg bhurgi(spicy scramble eggs),boiled eggs, minced chicken/lamb(kheema) etc.
