Mix Vegetable Kurma and Whole Wheat Tandoori Naan


Now that everyone is staying put indoors, there is no more going to the favorite restaurants and eating out. Kids love Naan and Punjabi style curries (They call is "ร“range curry"๐Ÿ˜†, due to the distinct orangish hue of the tomato based sauces in Punjabi curries) and miss their favorite Indian restaurant. So yesterday, made this elaborate Punjabi affair for dinner. They were overjoyed to have their favorite meal ๐Ÿ˜‹ and we enjoyed cooking together as a family :)

** The Naan's are made with whole wheat dough (No Yeast, No Baking Soda/ Powder) and baked in oven.

Mix Vegetable Kurma Recipe:

Vegetables: (Cut in Square chunks)
1.5 cups cauliflower chunks
0.5 cups Onion chunks
0.5 cups Carrot chunks
0.5 cups Red pepper chunks
0.5 cups Green peas

1 cups Paneer cut in squares

Cut everything and keep aside till ready to use.

Masala paste:
2 medium onions chopped
3 medium tomatoes chopped
1/3 cup cashews
2 tbsp Sesame seeds toasted
2 tsp chopped garlic
2 tsp chopped ginger
8 Black pepper, 5 Cloves, Small piece of cinnamon
Saute onions,  tomatoes with some oil till golden brown, Add sesame seeds, cashews, ginger-garlic and other spices. Let it cool completely before making into smooth paste in a blender with only little water.

Dry Spices:
3 tsp Everest Shahi Paneer Masala
2 tsp Red chili powder (Add more for Spicier curry)
1 tsp Cumin/ Shah Jeera
1 tsp turmeric
1 Bay leaf

Oil, Salt
Cashews and Cilantro for garnish


1) Saute the onion chunks, cauliflower chunks and other vegetables with some oil, cumin, bay leaf, turmeric, red chili powder and Shahi paneer masala.
2) Add the tomato-onion-cashew masala paste and salt and mix. Sautรฉs for few mins.
3) Add some water to adjust consistency. (Milk cream/ Coconut milk can be added for richer gravy)
4) Add the Paneer and cook for few mins will closed lid.
5) Garnish with cashews and cilantro. Enjoy hot along with Whole wheat Naan, Brown Rice and Salad for a delicious and healthy meal!

Vegetable Biryani

I know..I know..what you are thinking...I haven't been blogging actively lately....but a lot is happening this month and it's hard to catch up with everything!! Both kiddos birthdays in June, then the Puerto Rico trip...'in-laws' will be here next week...M's work travel....
Anyways....here is my favorite "Vegetable Biryani' recipe that I made for lil 'A's birthday party. The theme was 'Soap bubbles' as she loveeess popping bubbles and I made snack foods that were 'round' like bubbles!!

Round Melon balls in Melon shells-
Nutella sandwiches cut into circles-

Vegetable Biryani Recipe:

Ingredients:
Rice-
1 cup Basmati rice
1.5 cups Hot water plus a little more
4 of each cloves, black peppers,small cinnamon pieces
1/2tsp black jeera
salt
2tsp oil

Vegetable masala-
1/4 cup each of carrots,cauliflower,potatoes,green pepper,peas, corn kernels
1/2 cup dry/fresh grated coconut
2 medium onions sliced
2 medium tomatoes
1tbsp  chopped mint
1tsp sesame seeds
2tsp Biryani masala
2tsp red chili powder
2tsp ginger-garlic
4 of each cloves, black peppers,small cinnamon pieces
1tsp black jeera
salt
4tsp oil

Toppings and garnishing-
1 large onion sliced and fried till golden brown.
1 potato fried like french fries
1/4 tsp saffron in 2tsp warm milk
Chopped Cilantro
Chopped mint
Cashews
Almonds

Method:
1) Wash the rice and keep aside. Heat oil, add the cloves etc, ad the rice and saute for few seconds. Add the hot water,salt and let the rice cook and absorb the water. Cover for 10 mins. Then spread the rice in large plates to cool and help the grains remain separated.
2) For the veg.masala- roast the coconut, onions,tomatoes till golden. Let them cool. Grind in the blender along with ginger-garlic, sesame seeds.
3) Heat 2tsp oil,add cloves,cumin etc and the vegetables. Saute the vegetables till golden.Add the above masala paste, chili powder, biryani masala, salt etc Add very little water and cook.Add the chopped mint and mix.
4) Layering-
Coat the pan with some oil Add some cooked rice in a layer. Top with some Vegetable masala, fried onions, potatoes , chopped mint and cilantro.
Layer with rice again, then masala, then rice again. Top and decorate with the garnishing.
Pour the saffron-milk mixture all over the rice.
Steam in the oven/ stove top on low flame till steaming hot!

Serve hot along with cool cucumber-onion-yogurt Raita!

Bharali Tondali/ Stuffed Tindora

A vegetable done in a 'different' way can make a whole lot of difference.Though the vegetable has it's own flavor, the way you treat it and what flavors you complement it with ...will make it into a whole new dish...with a new flavor and appearance!!
Like for example...If you make Spinach...just the way you make "Alu (colocassia leaves) chi bhaji"...the maharashtrian way ...with peanuts,radish,tamarind, jaggery, besan flour etc...it will taste just like "Alu chi Bhaji"!!
So...like we make "Bharali Vangi" or 'Stuffed eggplant' and Stuffed Okra/Bhendi....here is "Bharali Tondali" or Stuffed Tindora!!

Ingredients:
20-25 Tondalis/Tindoras
1/2 cup dry coconut powder
1/2 cup ground peanuts
1tsp Maharashtrian goda masala
1tsp red chili powder (add more for spicier taste)
1tsp jaggery
1/2tsp Tamarind concentrate
1/2tsp sesame seeds
1/2tsp cumin seeds
1/2tsp mustard seeds
1/4tsp turmeric powder
salt
oil
few curry leaves
For garnish- chopped cilantro

Method:
1) Wash, drain and Slit the Tindora 3/4 th way lengthwise in a '+' shape.
2) Mix coconut, peanut powder, all the spices,tamarind, jaggery etc
3) Fill the stuffing in the slit Tindoras.
4) Heat 2tsp oil in a nonstick pan. Add mustard seeds, cumin, curry leaves. Add the stuffed tindoras. Add any remaining stuffed if left over.
5) Fry and cook on medium flame tossing every few minutes until the tindoras are cooked through.
Serve hot with Chapati!

"Fusion Cuisine"- Chinese Vegetable Pasta

"Fusion Cooking/Cuisine" is created sometimes....for 'innovation' and sometimes just for 'convenience'.
The examples of "Convenience Fusion Cooking" will be -using Wonton wrappers/Pie crust to make Samosas, using Ricotta cheese to make Pedhas, using Spaghetti to make Chinese Noodles etc etc....
We learn to create and work with whatever ingredients we have...and make something that we have either never eaten before or make something we always make but with just.... new ingredients.
One of my friends, who is actually not very much into 'cooking' makes this "Poha Pasta"! What he does is....he makes the recipe for the Poha with onions, mustard,cumin,turmeric etc..but adds cooked pasta instead of Poha!And it tastes good! Another recipe I read was about using 'macaroni' in daal to make the typical Maharashtrian 'Varan Phala".How innovative is that!
So....this weekend was 'Childrens Day"...November 14.There was a party for this occasion and we all were supposed to bring in something for lunch.I was wondering what to make...what kids will like...etc etc.
I was planning to make Chinese fried rice (because kids usually like the 'mild flavors" and colorfull veggies in this rice), but got to know that 3 other people were making some kind of rice as well. Then I thought,why not make Chinese Pasta???  Kids love pasta......and it will have all the flavors/sauces/ingredients of Chinese fried rice and the same colorfull veggies! Also, at social occasions eating in paper plates,with plastic spoons, holding the plate in one hand and eating.....it becomes hard to tackle foods like Noodles or Saucy curries/ Gravies etc. Short cut pastas( like Rotini/Fusili,Penne etc) done relatively 'unsaucy'....work, in my opinion, best.Everyone(including kids) can enjoy eating those with a fork without much hassle. Here is the recipe for my "Chinese Pasta" .I did exactly everything as I would do for 'Vegetable Fried Rice"....but added Pasta instead of rice.That was it ....the marriage of Italy and China for 'my convenience'!
Ingredients:
3 cups Short Cut Pasta of your Choice(I like Rotini because of its shape)
1/4cup Onion cut into bite size pieces
1/4cup Green Pepper
1/4cup Red Bell Pepper
1/4cup Carrots
1/4cup Broccoli
1tbsp Corn kernels
1tbsp Green peas
1tbsp Green onion leaves/spring onions for garnish
1/2tsp Ginger garlic paste
1/2tsp Soy sauce
1/2tsp Hot and sweet sauce
1/4tsp ground chili paste
1/4tsp black pepper
1/4tsp sugar
2tsbsp Roasted Cashews
salt
oil

Method:
1) Boil pasta in salted water till cooked (about 10 mins).Drain and keep aside.
2) In a Wok or big pan, heat some oil, add the ginger garlic paste and all the veggies.Saute for 2 mins on high flame.This will help in keeping the veggies 'crisp' and not soggy.
3) Add the cooked pasta,all the sauces,spices and mix.
4) Turn off the flame and garnish with spring onions and roasted cashews.
5) Enjoy the Chinese Flavored pasta warm or at room temp!
