"Potato Masala" Quesadillas

Yes this is one of those "Fusion" Cuisine entries....but it was also totally 'Fixing' Cuisine. I had 'Potato Masala' leftovers from a 'Masala Dosa' lunch...and I had few Spinach tortillas in the pantry....and most important ....hungry tummies in need of something quick!!
This was perfect ...Quick Fix snack/ lunch/ dinner dish...made in few minutes and tastes awesome!

The Potato masala, cheese and the Hot and Sweet sauce make a perfect combination to make your mouth water!!
Ingredients:
4 Large Spinach tortillas
1/2 Cup Shredded cheese
1/4 cup chopped raw onions
4tbsp Maggie Hot and Sweet  Sauce
1tsp oil

For Potato Masala (Like the Bhaji from Masala Dosa)
1cup boiled potato-chopped
1/2 onion sliced
2 green chil1es
1/2tsp ginger garlic paste
few curry leaves
turmeric
1/2 tsp cumin and mustard seeds
salt
2tsp oil

 Method:
1) Heat 2tsp oil, add the mustard and cumin.Let it splutter.Add curry leaves and onions.Fry till golden.
2) Add the turmeric, green chilies, ginger garlic paste and mix.Add the boiled potato, salt and mix.
3) Heat a flat nonstick skillet. On the tortilla, spread the hot and sweet sauce, the potato masala, raw chopped onions and cheese. Fold the Tortilla into semi circle.
4) Toast on low flame on both sides with little oil till slightly crispy and golden brown.
5) Serve hot along with more sauce/ chutney!

"Fusion Cuisine"- Tandoori Chicken and Naan/Roti Quesadillas

I was watching Guy Fieri's show"Diners, Drives Ins and Dives"  on Food Network the other day. They featured a restaurant named "Red Lion" that made 'Fusion Cuisine". Interestingly they made a Indian -Tex Mex fusion of Tandoori Chicken and Naan Quesadillas!!! Oh Boy...since I saw those...all I wanted to do was.....Bite into those Spicy Quesadillas!!!!


Since I so badly wanted to try those out, for my birthday 'M' suggested that we make those for dinner. We changed the recipe here and there to suit our tastes and the outcome was ...TERRIFIIIIICCCC!!!!
We tried the same Tandoori Chicken in Naan and in Tandoori Rotis.....and we polled that the Tandoori Chicken-Tandoori Roti Quesadillas were a notch above! (Sorry I don't have any pictures for that combo:(
Vegetarian Option:
We also tried the same with 'Tandoori Paneer- Naan ' Quesadillas.....and they turned out just as good.  Just substitute Chicken with Paneer in the recipe

Ingredients:
1) For Tandoor Chicken -
2 cups of boneless Chicken cut into big pieces(OR use Paneer Cubes)
1tsp Ginger Garlic Paste
2tsp Yogurt
2tsp Tandoori Chicken masala
1tsp Red chili powder(add more for spicier chicken)
1/2tsp Turmeric powder
2tsp Lemon Juice
1/2tsp Ground black pepper
1tsp Oil
 Salt
Marinate the chicken pieces with all of the above for 2 hours, in the refrigerator.

2) Topping:
1 Onion thinly sliced
1 Green Pepper/Capsicum thinly sliced
1/2tsp black ground pepper
salt
2tsp olive oil
Shallow fry the onion and green pepper in oil till just cooked.Add salt and pepper and keep aside

3) Naan/ Tandoori Rotis (I used the frozen ones)
4) Shredded cheese ( I used the Mexican style blend of -Monterey jack,Cheddar, Queso Quesadilla and Asadero cheese)
5) Olive oil

Method:
1) Thaw the frozen naan/ rotis in the refrigerator
2) Pre heat the oven to 375 F/ ~190C
3) Oil a baking sheet and place the marinated Chicken on the sheet.The pieces should not touch each other.Spread them out. Bake at 375 F for about 20-25 mins(For Paneer bake for 10-12 mins or so).Broil for 2 mins to slightly brown the chicken.Let it cool. Shred with hand into pieces to place in the Quesadillas.
4) Take a Naan/ Roti, place some onion-green pepper on the naan/roti, some shredded chicken and some Cheese. Toast on a skillet with some olive oil. Toast till  golden brown and the cheese has melted
5) Cut into squares/ Wedges and Serve Sizzling HOT!!

"Everyday Cooking"- Black bean and Corn Quesadilla


Had a rough start to the day.'M' usually leaves for work at 6.45 am on Thursdays. 'E' and me sleep till a little later.But today 'E' decides to wake up even before 'M' leaves for work.So obviously I have to wake up early and start the day....
Then.....after the daily chores,I decide to try out this 'Rava Dhokla' for a Potluck party on friday.But...the rava:soda ratio was all messed up and..so was my dhokla....all brown colored and tasting like 'soda'. Cancelled the plans of making this for the party, and started to work towards making lunch. Had planned to make 'Wheat dosas' with grated carrots..and eat it with leftover curries in the fridge..and mint-coriander chutney.But the 'unlucky' streak continued..and my mint-coriander chutney was... bitter..strong tasting....too minty.....not good :(
On top of everything..'E' was in a special mischievous mood today.He spilled one box of juice all over himself, stuck play- doh balls all over the furniture,wanted to play with scissors (!),wanted me to pick him up all the time....and muchhhhh moreeee....
Anyways...
Good part though...was I got a little better at photographing food!( That's what I think!).I took this picture of the 'Black Bean Corn Quesadillas' this morning,between all the craziness...and I believe it came out good! This quesadilla is based on the flavor/tastes of the 'flatbread' we had at the farmers market the other day.I tried it out and it came out really good.
Ingredients:
1/2 cup Black beans,boiled (I used canned,drained) and seasoned with salt,chili powder,cumin coriander powder
1/2 cup corn(frozen,thawed in microwave) seasoned with salt and pepper
1/2 cup Tomato salsa (recipe follows)
1 cup Pepper jack cheese shredded/Mexican blend chesse
4 Spinach/Corn/Wheat Tortillas
1 tbsp Cilantro chopped
Olive oil to warm and crisp the quesadillas.
For Salsa:
3-4 ripe tomatoes boiled,peeled and crushed OR 1 can of crushed tomatoes
1tsp olive oil
1 clove garlic chopped finely
1 tbsp onion chopped
1/4 tsp cumin coriander powder
1/4tsp sugar
salt,pepper,chili powder to taste
Method:
Salsa:
1) In a pan,heat 1 tsp oil,add crushed garlic and onions.Fry for 1 min
2) Add the crushed tomatoes, salt, sugar, chili powder,pepper,cumin-coriander powder and heat for 2-3 mins.Turn off heat.
Quesadilla assembly:
1) Spread about 1-2 tsp salsa on the tortilla.
2) Add 2 tsp black beans, 2tsp corn, 1/4 tsp cilantro,1tbsp pepper jack cheese and fold into half.( Semicircle)
3) Warm on a heated flat pan by brushing olive oil on both sides
4) Warm till the cheese melts and the tortilla gets golden brown marks.
5) Serve hot with sour cream or salsa.

Note:
1) Quesadillas can be made with various different fillings like fried Onions+Mushrooms/ fried broccoli/ green peppers/just cheese/Chicken etc
2) Cheese-I personally like the pepper jack cheese due to its spicy taste
3) Instead of corn tortillas,I have also made them with regular whole wheat 'chapatis'.(I usually make them for 'E').They taste pretty good too!
